A new classic
This afternoon I relaxed, and tried to stay cool by jumping in and out of the pool. I also snacked on these…
Around 5, I started prepping my fun recipe for dinner: Nut Butter crusted fries! I got the recipe from Oh She Glows (Thanks Angela!)
I cut a yam and an Idaho potato into fries, then covered in them the PB coating = 3 TBS PB + 1 TBS olive oil + a pinch of salt/pepper.
Then I put them on a lined baking sheet and baked at 400 degrees Fahrenheit for 40 minutes.
While the fries were cooking in the oven, Doris and I each had 2 more patties from lunch, topped with some mango salsa, served over spinach with some pineapple cottage cheese…

Cookies were baked (for our trip to West Palm Beach tomorrow!)
Then a repairman came to fix the AC! Turns out there’s a leak in the coil, causing the liquid that helps keep the ice intact, melt! Basically, he said that a completely new AC tank will need to be installed. Yikes!
After a little bit of digestion, I headed out into the neighborhood to try an evening run. Totally better than morning runs…I was at least able to complete 5.5 miles without stopping once! I finished in just under 53 minutes. Woot woot. Added bonus: it gets cooler the longer you run…
Since then i’ve drunk about 2 liters of water and my tummy is uncomfortably full. Oh well…
going to get a good night’s sleep for the 4+ hour drive to West Palm beach to visit Ezra’s grandma tomorrow!
